  • Direct heat is provided to the middle three slots in the steam table and residual heat to the first and fifth slots

PATENTED LARGE SMOKER

  • 36” x 44” x 22” vertical smoker with two 27” x 22” x 22” chambers
  • 16-gauge stainless steel
  • A steam reservoir in each chamber
  • Use wood, charcoal, or a combination of both
  • Two dampers create crossflow or offset smoke, and can be cut off at the floor
  • Two racks are built-in or add your own in between
  • Dampers are designed to dissipate smoke away from your customers’ faces
  • Two separate warming stations allow you to infuse smoked flavor from the steam and then move the food down to continue cooking
